Removes yeast and other solids from fermentation and fining


Reduce cost and improve yield with Pall's Oenoflow XL System

Filtration is a key operation in modern cider production to deliver visually bright and shelf stable product. Traditionally, cider clarification has been performed with diatomaceous earth or sheet based filtration technologies. However, with more favorable economics, easier operation and lower waste volumes, crossflow filtration systems like Pall’s Oenoflow™ XL system have become more widely adopted over the past decade.


After fermentation, cider is typically racked off the solids at the bottom of the vessel and then may be fined with agents like bentonite, isinglass or gelatin. The first filtration or primary clarification typically takes place within 4 to 5 days after fermentation but this maybe longer for traditional or smaller producers. During clarification yeast and other particles from fermentation and fining are removed to reduce turbidity and improve downstream filterability. Historically, clarification was performed with Diatomaceous Earth (DE) filters but today more and more cider mills are investing in crossflow filtration systems like Pall’s Oenoflow™ XL system.


In a fast growing market with producers widening their distribution, cider producers are under more pressure to improve quality and reduce costs while satisfying more stringent safety and regulatory requirements. Cider makers are challenged with selecting filtration techniques that are easy-to-use, less labor intensive and more environmentally-friendly, while maintaining character.


Clarification is the primary filtration step in cider production for removal of yeast and other solids from fermentation and fining and to improve downstream filterability. Traditional clarifying filters include Diatomaceous Earth (DE) filters.  However, with more favorable economics, lower waste and higher yields, Pall’s Oenoflow filtration systems have become the preferred technology.


The Oenoflow system is a membrane based system that allows for cider clarification in a single step without the need for any pre-treatment, filter aid or centrifugation.  Pall currently offers 4 models of Oenoflow XL systems making it the optimal solution for producers of all sizes.


Pall OenoFlow XL Filtration System

By eliminating the drawbacks of traditional diatomaceous earth filters, Pall Oenoflow microfiltration systems have become the preferred technology in the cider industry. The hollow fiber system enables removal of suspended contaminants from cider in a reliable, reproducible and single process step.


Clarification is achieved without the need for filter aids, centrifugation or interference with the chemical, physical or organoleptic components of the cider. Cost savings is realized by reducing product loss, consumables and labor. Furthermore, with a DE-free process and no solid waste for landfill, both environmental and operator safety are improved.


Pall’s large diameter Oenoflow XL modules incorporate proven PVDF membrane with approximately 145% more filter area. With 21.5 m2 of surface area the XL modules have at least twice the area of typical competitive hollow fiber membranes. These high flow modules allow Pall to manufacture more compact and therefore more economical systems. With a smaller footprint and less water and chemical consumption, Oenoflow XL systems are in line with many sustainability programs.


Additionally, Oenoflow XL modules utilize a symmetric membrane giving them a high mechanical strength that protects it from risk of failure even after many years of continuous operation. A back pulse during operation enables optimal throughput performance and long operating cycles.


For cider producers who are not investing in crossflow technology, Pall’s alternative disposable options are SUPRAdisc™ II modules and filter sheets.


SUPRAdisc II Depth Filtration Modules

Lenticular modules have a long history in food and beverage applications. They arose out of the need to package sheet-based depth filter technology in more user-friendly, closed systems, especially for small batch production applications. With high dirt holding capacity and filtration performance similar to filter sheets, lenticular modules provided an optimal and cost-effective solution for handling food and beverage fluids.


Classic stacked disc modules represent first generation module design. While the enclosed assembly offers benefits, there are performance disadvantages. Since the media is exposed, the integrity can be compromised during shipping, handling, installation and removal. Extra care must be taken to avoid damage. Additionally, individual cell proximity to one another is very close. During steaming, rinsing, or filtration, the cells may shift or warp causing individual cells to touch. This causes blinding of portions of each cell, which reduces the effective filtration area. Finally, classic stacked disc designs do not withstand any back pressure.  With only the downstream support layer, as little as 0.05 bar (0.7 psid) of back pressure can rupture the unsupported media in these modules.


SUPRAdisc II modules eliminate the disadvantages of the initial stacked disc modules. They offer increased capacity and reliability to satisfy customer requirements for a higher performing product.


The unique performance of the SUPRAdisc II modules is due to its double separator design which provides both upstream and downstream support for the filter media. The media is individually sealed and separated in between polypropylene plates, which results in optimal flow through the available surface area and a mechanically robust module. Flow is possible in either the forward or reverse direction. Back-flushing can improve regeneration and increase service life, and the design minimizes the risk of media buckling or tearing if the modules are subjected to reverse pressure or pressure shocks which may occur when the filters are positioned directly upstream of the bottling line. Additionally with the separators acting as a cage, the media is not exposed, which facilitates module handling and filter change-outs.
